Kanenaka's Shirasu, with over 100 years of history
The shirasu products that are born from the stubborn father's passion are exquisite.

Raw whitebait (for eating raw)
We use only the freshest shirasu caught, and then quickly freeze them in ice water. This preserves the firm texture of the shirasu, allowing you to enjoy the texture and flavor of freshly caught fish. Enjoy it as sashimi, in a raw shirasu bowl, or as kakiage (fried tempura).

Boiled whitebait
Fresh whitebait is cooked by skilled artisans in a traditional open-fire round pot. Our open-fire round pot method is characterized by high heat (100°C) and a short time (15-20 seconds), and is completed within an hour of being caught (sometimes as early as 30 minutes), resulting in a firm fish with a plump texture. You can choose between frozen and refrigerated products. Refrigerated products are shipped only on the day of catch, so delivery dates cannot be specified.

Chirimen
Whitebait cooked in a direct-fire round kiln is sun-dried and then turned into dried chirimen. Packed with the delicious flavor of whitebait, it can be used as a side dish with rice, or as an ingredient in rice balls, fried rice, pasta, and more.

These fresh sakura shrimp (for raw consumption) are from Suruga Bay. They are flash-frozen to preserve the crisp texture and distinctive flavor of the sakura shrimp. Steamed Sakura Shrimp

This ready-to-eat whitebait snack is made with folded sardines and nori seaweed, grilled until fragrant, and then cut into easy-to-eat sticks.
